Do Edibles Expire? Shelf Life, Storage, and Safety

6 minute read

You found a forgotten gummy at the bottom of your bag or a chocolate bar tucked away in a drawer. Now you are wondering whether it is still good to eat. It is a fair question, and the answer is a little more layered than a simple yes or no. Cannabis edibles do expire, and understanding why can help you get the most out of every purchase.

Yes, Edibles Do Expire

Like any food product, edibles have a shelf life. The cannabis extract inside them does not last forever either. Over time, two things happen simultaneously: the food itself degrades, and the cannabinoids begin to break down. That means an expired edible is not just potentially unpleasant to eat; it is also likely to be less potent than when you first bought it.

Most commercially produced edibles will carry a best-before or expiration date printed on the packaging. That date is your most reliable guide. Manufacturers calculate it based on the specific ingredients used, the preservation methods applied, and the results of standard food safety testing. When in doubt, that printed date is the place to start.

How Long Do Edibles Typically Last?

Shelf life varies widely depending on the type of edible. Here is a general breakdown of what you can expect:

  • Gummies: These tend to last longer than most edibles, often anywhere from six months to a year when stored properly. Their low moisture content slows down bacterial growth and mold development.
  • Chocolate: Infused chocolate bars generally last 3 to 6 months. Chocolate can bloom (develop a white, chalky surface) over time, which affects texture and appearance but is not necessarily a safety issue.
  • Baked goods: Cookies, brownies, and similar items have the shortest shelf life, typically one to two weeks at room temperature. Refrigeration can extend this somewhat.
  • Hard candies and lozenges: Similar to gummies, these can last six months to a year thanks to their low moisture content.
  • Beverages: Infused drinks usually carry a use-by date of a few months and should be treated like any other perishable beverage.

Always check the packaging for the specific product you have on hand.

What Happens to Potency Over Time?

Even if an edible still looks and smells fine, its potency may have declined. THC, the primary psychoactive compound in cannabis, gradually converts to CBN (cannabinol) through a process called oxidation. CBN is mildly sedating but far less potent than THC. CBD similarly degrades over time when exposed to heat, light, and air.

This means that an old edible might deliver a weaker or noticeably different experience than expected. For people using edibles for specific wellness purposes, this shift in cannabinoid profile can be frustrating. Freshness matters not just for taste, but for the effect you are looking for.

How to Tell If an Edible Has Gone Bad

Beyond the expiration date, there are a few signs that an edible is past its prime and should be discarded:

  • Visible mold: Any fuzzy growth, discoloration, or unusual spots are a clear sign the product has gone bad. Do not consume it.
  • Off smell: If the edible smells rancid, sour, or otherwise wrong, trust your nose.
  • Unusual texture: Gummies that have become rock hard or excessively sticky, or baked goods that are dried out and crumbly, have degraded in quality.
  • Taste changes: A noticeably stale, bitter, or unpleasant taste is a signal that the product is no longer at its best.

When in doubt, it is always better to err on the side of caution and dispose of the product.

Proper Storage Makes a Real Difference

How you store your edibles directly affects how long they stay fresh and effective. The main enemies of edible shelf life are heat, light, air, and moisture. Here is how to protect against each of them:

  • Keep them cool: Store edibles in a cool environment away from heat sources. Excessive heat accelerates both food spoilage and cannabinoid degradation. A drawer or cabinet away from the stove or oven works well.
  • Avoid direct light: UV light breaks down cannabinoids relatively quickly. Keep products in their original opaque packaging or store them in a dark container.
  • Use airtight containers: Exposure to air speeds up oxidation. If the original packaging is not resealable, transfer the product to an airtight container or zip lock bag.
  • Control humidity: Moisture encourages mold and bacterial growth, especially in baked goods. A dry storage environment is ideal.
  • Refrigerate or freeze when appropriate: For baked goods especially, refrigeration extends freshness. Many edibles can also be frozen, which significantly extends shelf life. Just make sure they are sealed properly to prevent moisture from getting in when they thaw.

At Ascend, products are made with quality ingredients and proper packaging to help maintain freshness, but good home storage habits are equally important once the product is in your hands.

A Note On Safety

Eating an expired edible that has gone moldy or rancid carries the same risks as eating any spoiled food. You could experience nausea, digestive discomfort, or other food-borne illness symptoms. The cannabis content does not protect against those risks. There is also the potency consideration. If an edible has significantly degraded, the dose you think you are taking may be quite different from what you actually receive. This unpredictability is another good reason to stick to fresh products and dispose of anything past its prime. It is also worth noting that proper storage is not just about the edible itself. Keep all cannabis products out of reach of children and pets, stored in clearly labeled packaging. Accidental consumption is a serious concern, and responsible storage is part of being a mindful consumer.

What About Homemade Edibles?

Homemade edibles follow the same general rules as the ingredients you used to make them. A batch of infused cookies will last about as long as a batch of regular cookies made from the same recipe. Without preservatives or commercial packaging, homemade products tend to have a shorter shelf life than store-bought options. Treat them the same way you would any homemade baked good, and refrigerate or freeze what you will not use within a day or two.
